Christmas, the festive feasting period is upon us. Time for a little indulgence and fattening up ahead of stringent New Year Great Gorilla Run training regime.
And when it comes to banana recipes it doesn’t get any more indulgent than banoffee pie.
INGREDIENTS (makes 6 fat slices)
4 bananas, peeled and sliced
1 lemon, juice of
150 g (5 oz) digestive biscuits
75 g (3 oz) unsalted butter, melted, plus extra for greasing
1 tsp ground ginger, optional
450g Dulce de Leche (toffee sauce)
284 ml carton double cream, lightly whipped
plain chocolate shavings to serve
INSTRUCTIONS
1. Toss bananas in the lemon juice and set aside.
2. Blitz biscuits in a food processor.
3. Add melted butter and ginger and blitz for 1 further minute
4. Butter six 10 cm (4 in) metal rings or tartlet tins and line with greaseproof paper.
5. Press the biscuit mixture into each ring.
6. Divide the toffee sauce equally among the rings and top with the bananas
7. Pipe or spoon on the cream, sprinkle with chocolate shavings and chill. 8. Remove from the rings or tins and serve.
